  some divine recipes to share.
Hey folks, here r some recipes i got off Ben & Jerry's site..(http://www.benjerry.com/our_products/recipes/) I hv not attempted to wreck my kitchen yet but no harm trying when u r free..dey sound so yummy! Altho my all-time personal fave is stil their Choc Fudge Brownie! Oooh la la~~(God forbid!)
 
Strawberry Zings
Serves 4-6
2-4 pints fresh strawberries washed and sliced (or substitute 2 pounds of frozen berries)
1/2 cup Grand Marnier
4 cups (2 pints) Vanilla For Change ice cream, softened
1 pint heavy cream, whipped
Juice of half a lemon
Put the strawberries and the Grand Marnier in a medium bowl and let sit for 20 minutes. Soften ice cream slightly and whip until fluffy. Fold in whipped cream and lemon juice. Fold in berry mixture. Spoon into champagne glasses or brandy snifters. Garnish with fresh mint if desired. Serve immediately.

Festive Ice Cream Sandwiches
Makes 8-10 sandwiches
2 cups sifted flour
1 1/2 tsp. Baking powder
1/2 tsp. Salt
1/2 cup butter
1 tsp. Vanilla extract
3/4 cup granulated sugar
2 eggs, well beaten
2 pints Ben & Jerry’s ice cream of your choice.
Prepare ice cream middles:
Spread the two pints of softened ice cream in a jellyroll pan. Place in freezer to harden for at least 2 hours. Prepare sugar cookies: Preheat oven to 350F. Lightly grease cookie sheets and set aside. Sift together dry ingredients and set aside. Cream together butter and vanilla until softened. Gradually add sugar, creaming until fluffy after each addition. Add beaten eggs in third, beating thoroughly after each addition. Add dry ingredients gradually to the creamed mixture, mixing well after each addition. Chill at least 30 minutes in the refrigerator. Roll dough to 1/4” thickness on a lightly-floured surface using a floured rolling pin. Lightly flour a cookie cutter and cut dough into your favorite shapes. Place on prepared cookie sheets and bake 10-12 minutes, until bottoms are golden, but not browned. Cool cookies on a wire rack.
To assemble sandwiches:
When ice cream slab is firm, cut with the same cookie cutter used for the cookies. Work quickly and assemble the sandwiches. Wrap individually in plastic wrap and place in the freezer.
Hint: Cookies will soften over time. If you want them to stay crisp in the freezer, coat the insides of the cookies with melted white or dark chocolate and cool to harden the coating. Assemble as above.

Sweet Vermont Snow
Serves 4
1 pint Vermont maple syrup
1 pint Vanilla for Change ice cream
Place syrup in saucepan and heat gently until the syrup reaches 240 F On a candy thermometer (soft ball stage).Remove pan from heat and cool briefly. While the syrup is cooling, scoop 4 servings of vanilla ice cream.Spoon equal portions of the cooked maple syrup over the ice ream and enjoy.

Merry Berry Shortcake
Serves 8
1/2 pound unsalted butter at room temperature
1/2 cup confectioners sugar, sifted
2 cups unbleached all-purpose four
1/4 tsp. Salt
16 oz can of jellied cranberry sauce
10-oz bag frozen raspberries
10 ­0x bag frozen strawberries, sliced
1/3 cup raspberry flavored liquor (optional)
2 pints Vanilla for a Change ice cream
To prepare shortcakes: Preheat oven to 350 F. Line a baking sheet with parchment paper. In bowl of electric mixer, cream the butter until fluffy, about 2 minutes. Gradually add the confectioners sugar and beat until well combined. Add flour and salt, mixing until just combined. Do not over mix.
On a well sugared surface, roll dough to 1/4” thickness. Using a 4 1/2” fluted biscuit cutter, cut the dough into rounds and transfer them to the baking sheet with a large spatula. Bake the shortcake for 20-25 minutes. They should be firm, but still pale in color. Cool on rack.
To prepare berry sauce, melt the cranberry sauce with liqueur in a small saucepan over medium heat. Stir in berries and heat through. Remove from heat. To assemble desserts: Split each shortcake and place the bottom halves on 8 dessert plates. Top each shortcake with a 4 ounce scoop of Vanilla ice cream.
Top each scoop with equal portions or the berry sauce. Place the tops on the shortcakes on each plate. (We like them leaning against the side of the dessert)
